Happy Tuesday lovely hearts!  Today on the blog I want to talk about the one and only amazing Medjool date!  If you've never had one of these caramel colored yummy treats, then you don't know what you're missing.  Dates are a fabulous alternative to sugary treats.   

Medjools are often informally known as the “king of dates,” the “diamond of dates,” or the “crown jewel of dates.” They are what is known as a “soft” date. The fruits are usually categorized as soft, dry, or semi-dry in reference to their texture and taste. Soft dates are usually considered to be the most exquisite in part because of how much harder they are to grow.

If you're willing to give these guys a try, I know you won't be disappointed!  Here's a recipe from a wonderful site that I follow (www.healthyhappylife.com).  

Chocolate-Dipped Peanut Butter Stuffed Medjool Dates

Ingredients
  • 8 Medjool dates, pitted (Natural Delights used)
  • 1/2 cup vegan chocolate chips
  • 1 tsp virgin coconut oil
  • 1/4 -1/3 cup nut butter, softened to room temperature
  • coarse sea salt 
  • superfood toppings: try coconut, goji berries, chia seeds, cacao nibs, spices and more.
Instructions
  1. Pit dates.
  2. Fill dates with nut butter, press closed with fingers. Place dates in the freezer to chill for 5-10 minutes - this will help them be coated in the chocolate more easily.
  3. Warm chocolate chips and coconut oil in the microwave until soft, stir briskly until silky smooth. Make sure chocolate cools a bit before dipping.
  4. Dip stuff chilled dates in the melted chocolate. Coat well. Lift date out of chocolate with fork and place on a parchent paper lined plate or small baking sheet. 
  5. Top date with sea salt and optional superfoods. Repeat until all dates are coated.
  6. Place finished dates, on parchment paper, in the freezer until firm enough to handle and eat. Usually about 5-15 minutes. Store leftover in the fridge -- let the stored dates warm a bit before serving for a softer texture.
Yield: 8 dates
Prep Time: 00 hrs. 10 mins. 
Total time: 10 mins.

Talking About it Tuesday...

Happy Tuesday beautiful hearts!!  I hope this day is blessing your heart in amazing ways!!  Today I want to talk about courage.  This word originated in 1250-1300 in Middle English as corage, meaning heart or innermost feelings.  In Latin cor means heart. The origin of courage resides in our heart center.   Paulo Coelho suggests that we become fluent in this language of the heart by being daring.  

Pondering this notion, I can't help but sit in a space of gratitude.  As I begin tapping into the energy of courage in my life, I begin to notice that courage is a bad ass trailblazer in my life.  Courage has held my hand throughout the various seasons of my life.  Courage has been a companion in times of joy and sorrow.  Courage always brings me back to my heart space.  

Are you willing to let courage be your sidekick and transform your life?  Allow yourself to be fluent in this language of the heart.

Monday Musing...

Happiest Monday to you all!  As I was reflecting on Monday's Musing, I couldn't help but think of the energy surrounding this momentous day.  Monday is a fresh start, a chance to clearly outline your week.  Do you agree? 

Monday encourages us ...To get focused.  To be epically inspired.  To ponder grand thoughts.  To be curious.  To be clear.  To be an adventurer.  To be kind.  To be lovers.  To be peacemakers.

I find myself returning to sacred rituals and nature as I seek to discover the essence of clarity.  Where do you find the clarity you seek in your life?  As Thoreau suggests ....you only hit what you aim at.  Getting clear requires your full attention.  By offering this attention, you can begin setting your intentions.  From this stance of setting intention, you can then begin asking the juicy questions about living!


These questions arise from your interior and are unique to each heart.  Some questions that have arisen throughout my life are:
How can I be of service?
How can I adopt the pace of nature?
How can I offer more love?
How can I practice compassion?

How can I share and express my gifts?
How can I gracefully accept change?


Clarity and certainty live within the walls of our hearts.  May you tap into this innate resource on a daily basis.   Set your sights...trust your heart...follow your passions...make friends with change.

Happy Thankful Thursday beautiful hearts!!  

Today I am so thankful for this four letter word...LOVE.  How has the energy of this word impacted your life-your heart-your relationships?  Has love offered you clarity?  Has love tucked you into a dreamland of opportunity?  Have you fully opened your heart to this guest?  Can you sit amidst the seasons of love and still remain in awe?  As John Lewis surmised,  “If not us, then who? If not now, then when?

In my heart and mind, love is the infinite bringer of life.  Love is the sage of the ages.  Love is the insurmountable gift that we continually offer to one another.  Love causes us to follow our bliss.  Love animates our passions.  Love holds our hand while we forge ahead.  Love helps us to become an authority in our own life.  

Today and everyday I am so grateful for this energy in my life.  To feel the intensity of this energy and to share it with the world, that is something to be truly thankful for.
